
I had a great day with Chris. We dropped the kids off at school and headed to the Y for a workout. I have a love/hate relationship with one particular crossfit workout. The workout is a 20 minute AMPRAP (As Many Reps As Possible) 4 Sumo Deadlift High Pulls (65lbs.) , 8 Hang Cleans (65lbs.) and 16 Lateral jumps over the bar. When I first did this workout at Nicole's gym I think I did 17 reps, but the last two times I did this workout at the Y on my own I only did 15. My successful 17 was because Nicole was screaming at me to push myself- it's effective! Anyway, today I did 16, so I was happy. Chris did 11 the first time and 15 today using 95 lbs. He really bumped up his reps! Love it! After that, we worked upper body and finished with pull ups.
I made this yummy blackberry cobbler for dessert. It really is delicious and the kids loved it too!
Berry Cobbler (Nicole Spitzack)
1 cup fresh berries
1 cup almond meal
2 eggs
2 T coconut oil
1 tsp. cinnamon
drizzle with honey if you choose
Preheat oven to 375. Spread coconut oil in the pan or custard cups. Fill with berries. Combine all the other ingredients, pour into dish and top with more berries. Bake until berries are bubbly- around 20-30 minutes. I had trouble getting it to brown at first, so brush top with coconut oil (thanks for the tip Nicole). I doubled the recipe since we have a large family.
